What Is It About Wheat?

Wheat is more than a grain, it's a biological signal of well-being, especially when it's fresh out of the oven. Unfortunately, it's also become one of the most common allergens and immune system sensitizers in the American diet. Because there are wheat-sensitivities and wheat allergies among us, we've been on a personal quest to find suitable substitutes for our Daily Bread. And so, here we present a running list of the best and worst we've encountered on the road to a wheat-free wellville.

If Aunt Jemima Had Celiacs

She would have come up with Arrowhead Mills, Organic Gluten Free Pancake & Baking Mix, which uses a combination of rice and corn flour, potato and tapioca starch to produce the kind of fluffy, scrumptious pancakes that make Saturday mornings perfect. Unlike many other gluten free flours, this one yields zero aftertaste, the pancakes are light, springy to the touch and with a golden crust on the surface. They left our house smelling just like we'd made Aunt Jemima's own, which in a wheat-free life is a dream come true. The package says it can be used for baking...we're salivating at the thought of Tollhouse cookies in the oven.
